Alois is a retired psychologist from Germany. Born 1939, he had grown up in a little village in the German region of upper Swabia as the youngst son of a farmer's family. In this podcast he speaks about the culinary (or sustenation) habits there, with many foods being home-grown, and very little things bought in the village shop. We also learn a recipe for a very simple Swabian porridge made from a lightly baked wheat semolina.

Wolfgang Schatz is an activist in the international Slow Food movement. He also teaches at VHS Hannover about healthy and sustainable cooking and eating. A crucial part of this is using produce from sustainable agriculture. In this talk he explains aspects such as fair breeding, the relevance of local and regional food productions; Lower Saxonys strengths and opportunities in this area. We also learn how we can assess the quality of asparagus, and how we can make our own sourkraut. The talk ends with a discussion of the modern trend of preparing meals with insects.
